CHOCOLATE SPONGE CAKE
69gr Cane Sugar
34gr Invert Sugar
6gr Water
139gr Egg Yolk
188gr Egg White
17gr Coconut Oil
41gr Whole Milk
69gr Rice Flour
13gr Extra Raw – Cacao Powder
17gr Cane Sugar
Cook the invert sugar, 25g cane sugar and water at 118ºC.
Place the egg yolks in a mixer at medium speed and slowly add the sugar. Beat until they become whitish and fluffy.
Beat the egg whites with the remaining sugar.
Carefully fold in the two previous mixtures.
Melt the coconut oil in the hot milk and add to this mixture 1/4 of the egg whites and the yolks, add the flour and the sifted cocoa powder. Involve this mixture the remaining egg whites and egg yolks.
Add the remaining egg yolk mixture.
Pour the batter into the silicone molds and bake in the oven at 190ºC.
Once baked place on a wire rack. Allow to cool before using.
RASPBERRY CREAM
148gr Raspberry Fruit Puree
10gr Coconut Oil
2gr Pectin NH
5gr Inulin
2gr Ice Cream Stabilizer
10gr Grape Seed Oil
Mix the inulin with the pectin.
Heat the puree to 45ºC with the coconut oil in a pan, add the inulin mixture little by little, stir with stir sticks and heat to 85ºC.
Cool to 40ºC. Emulsify the usseed oil with turmix.
Freeze in molds.
CREAM CHEESE MOUSSE
118gr Water
7gr Gelatin Sheets “Silver
1gr Salt
517gr Philadelphia Cheese
150gr Pasteurized Egg White
88gr Cane Sugar
16gr Inulin
Heat water to 20ºC.
Soak, drain and melt the gelatine. Add to the water along with the salt. Grind with turmix.
Heat the cheese to 20ºC and add it little by little to the previous mixture.
Cool until it begins to gel.
Assemble the egg whites with the sugar and inulin for 10 minutes.
Add them little by little to the previous mixture.
Pour into silicone molds.
RASPBERRY AND CHOCOLATE CHEESECAKE
80gr Fresh Raspberry
With the remaining mousse place on guitar sheets with the help of a piping bag, make small circular dots, place a sheet over the mousse and freeze.
Place a cake base on the bottom, then place the mousse, another cake disk, and finally place the mousse that was made on the guitar sheets.
Decorate with raspberries.
