CHEESECAKE BAKED WITH PINEAPPLE AND LIME COMPOTE
PINEAPPLE JAM
284gr Pineapple
113gr Sugar (Sucrose)
Cinnamon Stick
Lime zest
Cut the pineapple into cubes.
Place in a pan with the sugar and cinnamon stick.
Boil for about 30 minutes.
Remove when it reaches the road point.
Add the lime zest. Cool.

10ogr Whole wheat crackers
25gr Butter 82% M.G.
250gr Philadelphia Cheese
110gr Sugar (Sucrose)
1gr Lime zest
1gr Lemon Grated Grated
1gr Vanilla Bean Tahitensis
140gr Cream 35%
100gr Whole Egg
20gr Egg yolk
Whip the cheese with the sugar, the vanilla zest and the zest of lime and lemon zest.
Beat the remaining ingredients and fold them in.
Crush the cookie and fold in the melted butter. Place this preparation in a mold with a removable bottom.
Pour the mixture over the crackers and bake at 180ºC for about 30 to 40 min.
